I'm so lucky.

Josh had to grow his beard out for a contest at work. when i say "had to" i mean, he chose to. The beard growing lasted for a month, and now, today, it is "Shave Day." I'm proud to be dating him. His creepy Trucker look really compliments him well. I'm diggin it.
anyway, For those of you who wonder when you get to meet him...he'll be at Alex and grant's party on Saturday...so if you'll be there, you'll finally get to meet him. But thankfully, he'll be clean shaven by then! Whew. :) Oh Joshua...you're such a nerd.

The Pad Thai recipe!
Hello everyone...since i raved about the pad thai recipe in my last blog, i thought i would post the link to the recipe for all of you!

Now, some of you might wonder, what is a Tamarind? They look like this:

They have a tart/sweet taste to them, similar to a date, i'm told. These are the confusing part of the recipe. There should be directions on the package as to how you make a Tamarind paste, but in case you don't know...i'll tell you.
First, peel the hard shell off from the fruit. (yes, it's a fruit)Then put the fruit in a bowl with 1/2 cup of boiling water. Cover the bowl with vented saran wrap. put the bowl in the microwave for 2 minutes and cook on high. take the bowl out and leaving it covered, let it sit to cool. Once it is cool, you can remove the pits and add the 2 tablespoons of Tamarind pulp/paste that is required, to your sauce. so good!
so so so good. I really recommend making this. it's honestly one of the best Pad Thais i have ever tasted in my life. mmmmmmjavascript:void(0)mm.

I hope everyone had a wonderful Valentine's Day!

I started my day at Church with Joshua P Janos. Then we went to the park and walked around outside. it was beautiful out and the fresh air was enough to get both of us out of our winter funk. It was refreshing...we needed that to be rejuvenated. Then, my sweetie planned out a wonderful dinner for us to cook together. He got all the fixings for Pad Thai, my favorite, and it turned out to be the best i've ever tasted. both he and i were extremely pleased and surprised that our "make at home" pad thai could taste better than some we've tasted int he restaurants. We're a good team when it comes to cookin in the kitchen! He also got these sweet little heart shaped, raspberry cheesecakes with raspberry sauce on top and a yummy chocolate crust. mmmm it was amazing. We had wine and just enjoyed each other's company and conversation. We laughed a lot...which is one of my favorite things about him. He makes me laugh...and..he thinks i'm funny!!!! I'm lucky. So very lucky.
It was a fantastic weekend filled with family and lots and lots of love. I'm content and happy in my life. Everything is in it's right place, and i couldn't be happier. I thank God every day for the blessings i've been given.

HELLO FAITHFUL READERS!
This weekend i got to watch my little nephew. He's so sweet. He can be a little pill though too, if he isn't getting his way. Joshua helped me babysit Saturday, for little Mister Major Briggs. While Mommy and Daddy were out in Arizona for Kate's Friend Beth's Surprise birthday party...Auntie Megan got to play with her favorite little four legged boy! Here are a few Pictures.
It was time to go for a walk, and Major really loves his boots. They keep his little feet warm and dry!

It wouldn't be an afternoon with Auntie Megan, if we didn't play dress up. Like his jeans? they're new, from japan!

And then there's that face. it just melts me. I love you Major Briggs.

I had a really fun time with him...especially when we got to go to bed and he curled up my my face...right in the nook under my chin. He's a sweet little boy, but I'm certainly glad i got to give him back at the end of the night on Sunday. He can be quite a handful too!! I look forward to watching you again soon, major! Love you!

Happy Birthday, Brianna!

I wanted to say a happy happy Birthday (Yesterday) to my beautiful Cousin, Brianna Marie. (That's her, holdin da baby!) I wish I could have seen you on your 26th Birthday, But from the pictures you posted online, it looks like you had a great day with your family! Love you!
